Колись я була переконана, що приготувати смачний бульйон неймовірно важко. Те, що виходило у мене зазвичай закінчувалися неапетитну каламутну воду з сумнівним ароматом, а яловичина було сухим і твердим. Саме через це я купувала напівфабрикатами, хоча дуже хотіла про справжню ароматну, золотаву та прозору страву, яку пропонують у рестораціях.
Ситуація кардинально змінилася, одного разу я натрапила в інтернеті на сайт https://masterdoma.vinnytsia.ua/ (https://masterdoma.vinnytsia.ua/). Сайт просто кишів кулінарними ідеями! Гортаючи різноманітні рецепти, я натрапила на той самий — «Бульйон яловичий з овочевими галушками». Варто зазначити, що я вирішила поки що обійтися без галушок, сам рецепт бульйону став для мене кулінарною істиною.
Дію я за таким алгоритмом:
1. Керуючись інструкцією з [я придбала яловичину на кістці — зупинила свій вибір на голяшці. Поклала м'ясо в каструлю та залила холодною водою, так, щоб рідина повністю покривала шматок.
2. Поставила каструлю на сильний вогонь на максимальному вогні. Обов'язково слід — прибрати утворений накип, що з'явився на поверхні. У минулому я пропускала цей крок, і юшка завжди була мутною.
3. Зменшила вогонь до мінімуму, так, щоб поверхня лише зрідка хвилювалася. Поклала головку цибулі, моркву, запашний лавровий лист, духмяний перець і сіль. Томила страву близько трьох годин, накривши каструлю.
4. Процідила готовий бульйон. Переді мною постав неймовірно прозорим, з красивим бурштиновим відтінком і неймовірним духом, що в домі запахло справжнім домашнім затишком.
Тепер я варю його регулярно і з великим задоволенням. Це ідеальна основа для моїх улюблених супів, чи просто частуванням самі по собі, яку я сервірую з рубаною зеленню та сухариками. І кожного разу, коли кушту тієї запашної рідини, я згадую портал, що став для мене провідником у світ ідеального бульйону.
